Recipe conversion factor = desired yield / given yield (N/O=conversion factor)
Conversion Factor = New yield / Old yield
So to reach your conversion factor (the number you will multiply each ingredient by), you take the yield you would like to end up with, this will be your new or desired yield and divide it by you old or given yield in the recipe.
If the portion size changes, use the total yield.
example
given yield is 35 portions of 185 gr and we desire 50 portions of 230 gr.
* Conversion factor = (50 x .230) / (35 x .185)
Conversion factor = (11.50) / (6.475)
Conversion factor = 1.77606
Conversion factor = 1.78
